These tasty root vegetables have to be one of the easiest veggies to grow, they even thrive in poor soil with little water. In my garden my plants reached 12 feet tall, and are dotted with delicate floaty sunflowers on the tips of their stems in March. The flowers can be used as cut flowers. The plants die off in winter and that's when the tubers can be harvested to be cooked up and enjoyed or planted out in another section of the garden.
